If you love potatoes and chicken you will be certain to love this Loaded baked Potato Chicken Casserole. It’s a delicious dish from grandma’s old recipe box. If you wanted, you could even swap the chicken for seasoned steak-bites. Talk about comfort food that hits the spot every time.

Loaded Baked Potato Chicken Casserole

Prep Time: 20 – 30 min
Cook time: 60 – 74 min
 
Recipe Ingredients
1.5 lbs chicken breasts (cut into cubes)
1/2 lbs bacon (chopped)
6 cups potatoes (cut into cubes) 4-6 tbs butter (melted)
2 tsp onion powder
2 tsp black garlic powder (plain will work also)
1/2 tsp sea salt
1/2 tsp black pepper
1 cup monterey jack cheese Sour Cream

Chicken & Dumplings Cooking Directions

Cut the potatoes into 1/2 inch cubes and place them in a baking dish. Melt butter and add the following ingredients to it, onion powder, garlic powder, sea salt, and black pepper then mix together. Drizzle the melted butter mixture over the top being sure to mix through, coating the potatoes evenly. Bake the potatoes at 400*F for 45 min.
Add chopped bacon to a frying pan and cook through to your liking. Once complete, remove bacon leaving the grease in the pan. Place cubbed chicken breast into the pan and cook thoroughly (about 15 min). Place cooked chicken over the baked potatoes and sprinkle bacon and cheese on top. Bake for an additional 15-20 min or until cheese is fully melted.
Add the final touches – a dollop of sour cream with a sprinkle of chopped chives. Serve and Enjoy!
